Cannabis-Infused Sugar Cookies for a Hazy Holiday Season

Cannabis-Infused Sugar Cookies

What’s more, you can make it for Valentine’s Day, your birthday, and other occasions. Just make sure you follow our instructions to the letter so it comes out perfect!

Ingredients 

  • One cup of softened cannabutter or solidified cannabis coconut oil
  • One cup of granulated sugar
  • Five cups of all-purpose flour
  • Five teaspoons of vanilla extract
  • One large egg
  • ¾ teaspoon of table salt
  • ¾ teaspoon of baking powder

Directions

  1. Mix the cannabutter and sugar in a large bowl until the combination is creamy. You can use an electric hand mixer to make the process faster.

Tip: Butter or oil makes it easy for the cannabinoids in marijuana to move through your system.

  1. Add the vanilla extract and egg into the mix and beat until it’s well combined.
  2. In a separate bowl, whisk the flour, salt, and baking powder thoroughly.
  3. Gradually add the dry ingredients into the wet mix in step 2 till you get a smooth and properly mixed dough.
  4. Place about half of the dough on a large plastic wrap.
  5. Cover the dough with another wrapping paper and mold it until it’s flat. 
  6. Repeat steps 5 and 6 for the remaining part of the dough.
  7. Transfer the flattened dough to your refrigerator for at least 2 – 3 hours or up to five days.
  8. Preheat your oven to about 350°F (175°C).
  9. Dust a clean and flat surface with flour and place the chilled dough from the refrigerator on it.
  10. Roll out the dough to either ¼ (for softer cookies) or ⅛ (for crispier cookies) of its initial thickness. Add flour where necessary while rolling the dough to prevent it from sticking.

Tip: If you’re finding the dough difficult to roll because it’s cracking, let it rest at room temperature for about 15 minutes so it can soften. 

  1. Cut out your cookie shapes using a cookie cutter, and transfer each piece to an ungreased baking sheet with at least an inch spacing.
  2. Transfer the baking sheet to the oven and bake at 350 °F for 8 – 10 minutes until the edges become golden brown. Keep in mind that thinner cookies would take less time, while the thicker ones will need more time.
  3. Set cookies aside to cool on the sheet so you can decorate them. 

Cannabis-Infused Icing

After you’ve prepared the perfect cannabis cookies, you’ll need an extra dose of bliss. That’s where the cannabis-infused icing comes into play, and you don’t have to limit the frosting to just your marijuana cookies. You can add it to pretty much any other thing you want to turn into an edible. This includes cakes, fruits, donuts, pretzels, and even ice cream. Check out how to make the icing below. 

Ingredients

  • Three cups of powdered sugar (sifted)
  • Three or four tablespoons of milk 
  • Two tablespoons of light cannabis corn syrup
  • ½ teaspoon of vanilla extract
  • Food coloring (optional)
  • Sprinkles (recommended)

Directions

  1. Mix the powdered sugar, milk, vanilla extract, and corn syrup in a medium-sized bowl until they are well combined. 

Tip: If the icing is too thick, add a teaspoon of milk per time until you get a pipeable texture 

  1. To color the frosting, divide it into as many bowls as the number of desired colors. Add your color to the frosting in each of the bowls.
  2. Scoop the frosting into a piping bag and pipe it on the cookies. You can also add some sprinkles to spice up the decoration.
  3. Let the cookies sit at room temperature until the frosting hardens. Depending on the texture of your frosting, this can take from 30 minutes to several hours.
  4. Once the frosting is set, all that’s left is for you to enjoy your cannabis-infused sugar cookies. Feel free to stack them up for later if there aren’t enough mouths to consume them all at once.

How To Store Your Cannabis-Infused Sugar Cookies

Just like regular homemade cookies, you can store these cannabis-infused ones in an airtight container at room temperature for up to seven days. If you want to keep the cookies for more than seven days, transfer the airtight container into a refrigerator to avoid spoilage. Also, throwing a slice of bread into the container is a simple hack to keep your cookies soft and moist.
